Salmon Cut Eye of Silverside Roast

Salmon cut beef refers to a particular beef cut from the topside of the animal. It is comprised of a single muscle and is therefore free from bone or gristle. This is an unrolled roast. It gets it's unusual moniker from it's resemblance to a salmon before it is cut into smaller roasts! It is also known as the Eye of Silverside.

This makes for a show stopping roast. Full of flavour and incredibly tender. 

From our native breed cattle which have spent over 7 months of the year outside in the countryside, building up their muscle naturally while grazing and roaming and developing incredible marbling within the meat. 

Although typically lean with the fat removed, our butcher has kept a small layer of fat for added flavour and delicious gravy - you can trim this off is you prefer (although we prefer to leave it on for roasting!). 

This roast can also be trimmed down to make tender beef medallions.
